I don't generally cook much, yet alone make pancakes. My mama insisted I make some pancakes because of Масленица, so I sighed, and said OK. Of course, being health conscious AND a health coach in training, my pancakes had to be not only delicios (which oh. em. gee! they were!) but also healthy.
My pancakes are made with buckwheat flour, eggs, milk, a dash of baking soda and a bit of fantastic olive oil from Crete. I also added some shredded coconut, blueberries and vanilla extract to the batter. That's it!
Topped it off with more shredded coconut, pecans, berries, raw honey and cinnamon.
Et voilá! Day off done right :)
